White Sonora wheat is one of the oldest grown wheats in North America. It was thought to be brought to the Sonoran Desert by Padre Lorenzo de Cardenas between 1640 and 1650. This wheat thrived in the semi-arid climate and soon became a food staple for the region's inhabitants. The wheat was ground and used to make masa for tortillas, and other dishes like pinole and posole with the whole wheat berry.
It has a rich buttery, slightly sweet taste.
It makes wonderful biscuits, pancakes, waffles, pastries, quick breads, cookies.
Grown and stone milled in Powell, Wyoming
